I love sweet potato souffle and I don’t care what time of year it is either. I don’t wait till Thanksgiving to eat it. I can have it any time!
This dish would work for brunch too as well as lunch and it’s a healthy meal that won’t make you feel bloated in the middle of the day when you have to go back to work.
Hubby loves white pasta dishes so I bet he’d go for this in a heartbeat. It’s so creamy. We’ve been good though with our diet in laying off pasta but I had to post this luscious photo!

A healthy way to eat lunch! I’m not a black olive fan so I’d substitute that with green olives, but that’s why cooking is so fun. We can tailor our dishes with ingredients we like and there’s no wrong or right way to cook or prepare a meal!
This is such a comfort meal. Risotto cooked with pumpkin and herbs while the chicken is wrapped in Italian prosciutto and topped with parsley, my favorite herb! This is couch food as my hubby would say!
I’m not eating pasta anymore, however looking at it sure makes me crave a nice plate of it mixed with spinach and topped with Parmesan cheese.
So we have avocado, peppers, strawberries, tomatoes, and herbs. Ready to cook something good?!
Lovely ingredients to make an awesome casserole: tomatoes, mushrooms, green beans, garlic, onion, peppers, even though this isn’t in the pic, I’d add potatoes and leeks too!
