This is a dinner combo I can go for in a minute! Potato skins topped with parsley and herbs with salmon, my favorite fish, and asparagus or any other green veggie substitute will do.
Brunch is that combo of breakfast and lunch and the dish is perfect cause we have salmon which would be lunch or later and eggs which typically is breakfast. I think whoever made up the word “brunch” couldn’t make up their mind which they liked best, breakfast or lunch. Either way, this dish looks delicious and it’s colorful with the tomatoes and bread on the side.
I love a good cucumber salad and mix it with apples for sweetness with Ranch dressing and some herbs and I’m happy!
I love casseroles and one reason is that I can make one out just anything I have in the frig. It’s a great meal when I don’t have time to shop because certain ingredients I always have on hand. And because I love veggies, whipping up a casserole is easy peasy!
Nothing beats a difficult or dreary-like day like homemade soup and bread for dipping or cheese bread! I’m not sure what today is like in your neck of the woods but I can say a bowl of soup is guaranteed to make you feel better – spirit and soul!
