This dish would work for brunch too as well as lunch and it’s a healthy meal that won’t make you feel bloated in the middle of the day when you have to go back to work.
A healthy way to eat lunch! I’m not a black olive fan so I’d substitute that with green olives, but that’s why cooking is so fun. We can tailor our dishes with ingredients we like and there’s no wrong or right way to cook or prepare a meal!

Part of my “Journey to a Healthier Me“ was to add more leafy greens to my daily diet. But that doesn’t mean I’m eating a full salad everyday. I can add lettuce to anything like toast for example with a little fruit on top.
I had never heard of kohlrabi until I came across this dish. It’s a part of the cabbage and no wonder why I like this photo. I LOVE cabbage! This one has tomatoes and olives with melted cheese topped with herbs.
